Q & A (Afternoon Tea)

Customer:
Is afternoon tea the same as high tea? High tea is the one with the little cakes right?

Tea Store Owner:
Afternoon tea is a light meal served between 3pm and 5pm. Historically the English would have this meal every day, however as time has progressed this custom has fallen out of fashion. In the United States this meal is often served in cafes or hotels for people who are celebrating a special occasion. Many people mistakenly call Afternoon Tea "high tea" because it sounds more elegant. High Tea is the main meal at the end of the day, and is served on "high" tables in the dinning room, while Afternoon Tea (sometimes called "low" tea) is served on coffee tables while the guests sit on low chairs or sofas.

Q & A (Organic Tea)

Tea Wonderer:
I hear a lot about all this Organic Stuff. Should i only be buying organic teas?

Tea Store Owner:
Organic is a hot topic right now, i find the middle road to be the wisest. Millions and possibly billions of cups of tea are drunk on a daily basis, most of them are not organically certified. millions and billions of people are not getting sick from this "tainted" tea. If you feel better drinking Organic teas then go right ahead and keep buying them. Indeed you will probably be consuming less artificial chemicals on whole if you eat only organic food. If you find that your favorite tea happens to not be organic, drink with confidence, its still a healthy and safe drink.

I've always wondered how to make Thai Iced Tea. Does anybody ever make this at home? I found a couple of recipes on line a while back that suggested that it's just about making a really strong brew and then adding sweetened condensed or cream and sugar: my results were not drinkable. Any suggestions?
